Baked Spring rolls

Well.. I had a Jicama left in my fridge

( from CNY party as we had rojak)  I didn’t want to waste it.. so I made Spring Rolls! I don’t really want to deep fry because it is very unhealthy… so.. I baked them! 😀 I actually did baked spring rolls once before BUT it didn’t turn out well – it sticks onto my baking sheet and I had broken spring rolls.

If you are baking your spring rolls, please don’t be lazy.. you MUST brush the baking sheet and the spring rolls with veg oil!!! else it will stick onto the baking sheet!

And you will still get crispy spring rolls when u baked them, just that it’s not as brown 🙂 Bing and I enjoyed it very much!

Baked Spring rolls recipe

(inspired by My Kitchen Snippets)

Ingredients:

1 small cabbage
1 medium size jicama/bangkuang/yam bean – shredded
2 carrots – julienned
2 tbs dried shrimp – soaked in water to soften and minced
3 cloves garlic – finely chopped
1 egg – beaten (for sealing the rolls – Optional. Mine stick together w/o the egg)
1 packet of spring roll wrappers

Seasonings:

1 tbsp oyster sauce
3 tbsp soy sauce
½ tsp of sesame oil
Salt and pepper to taste

1. Thaw the frozen spring roll wrappers.
2. Heat up the frying pan with a tbsp of olive oil. Add in chopped garlic and dried shrimp,stir fry until fragrant.
3. Add in jicama and carrots. Stir fry for 2 minutes minute and add in all the seasonings and 1/4 cup of water. Continue cooking for another 7 minutes or until the jicama is soft. Check seasoning. Set aside to cool. (I drained the filling to remove excess gravy/water. I don’t want soaky spring rolls!)
4. Prepare a baking sheet and line it with parchment paper or aluminum foil. Lightly brush it with some vegetable oil.
5. Peel off a piece of wrapper and place it on a flat surface. Place some cooked filling in the center of the wrapper, pull over both ends and roll up the wrapper. Brush the end with some egg to seal.
6. Line all the spring rolls on the baking sheet. Lightly brush the spring roll with some vegetable oil.
7. Bake in a pre-heated 425 degree oven for 25 minutes or until lightly brown. Serve warm or room temperature with some chili sauce.

Banana cake

Have you ever crave for something that you bake/cook?

Like there’s nothing outside that can be compared to your own baking/cooking? haha.. for me, it’s Banana Cake! I have never been a fan of Banana cakes because I find those in bakeries ( in SG that is) very oily.. BH likes Banana cake though. He was the one who suggested that I baked it. Anyway, my first attempt on baking Banana Cake was BAD – I guess.. it got to do with the recipe. I followed another recipe and was glad that it worked out perfectly!

I am glad that I kinda perfected my Banana Cake! 😀 and I absolutely love how my Banana Cake taste~~ Yummy!!

Usually, people bake Banana cake because their bananas are over-ripe… for my case… I BOUGHT BANANAS for this purpose! 🙂 haha.. so 1/2 way thru’ preparing the ingredients.. I realised that my baking power expired!!! OMG!!!! I wanted to eat MY Banana Cake so badly that I kept calm and carried on. Phew.. I was glad I did!! It turned out super well!!!

AND I realised that another trick to baking is to use SMALL pans. Recipes recommends 8/9-inch pans BUT u don’t have to use such a big pan. Small pan = mistakes are minimized. Small pan also means that u could give away a cake to your neighbour/friend easily. wahaha…. NOT for this Banana Cake though… We love it so much that we could finish all up in a day!!! Of course we didn’t la!!

Banana Cake Recipe

– 180g unsalted utter
– 180g castor sugar
– 2 extra large eggs, lightly beaten
– 250g cake flour
– 1 tsp baking powder
– 1 tsp baking Soda
– 220g bananas, mashed
– 50 g dairy whipped cream (I used evaporated milk)
– 1/2 tsp vanilla extract
1. Cream butter and sugar till light and creamy.
2. Pour in eggs gradually and beat till creamy.
3. Add in whip cream, mashed bananas and vanilla extract and mix well.
4. Add in cake flour, baking powder and baking soda, and beat for a short while, just to make sure everything is incorporated.
5. Pour into an 8-inch round tray. ( I used 2 6-inch round pan)
6. Bake at 175 degree celcius for about 50 to 60 mins, or until cooked.

*I used eggs and butter at room temperature.

How you know you made good Banana cake?? In my opinion, it’s when the bottom is not hard and there is NO 2 layer difference in colour. If there’s a difference in colour – it means you probably overbeat the batter 🙂

I think I need to grab a slice of my cake now…. kekeke

P/S: Hope u didn’t go bananas reading this.. haha.. I think I have nv typed bananas so many times in my life before!!! 😀

Pre-CNY party

BH and I organised a gathering at our apartment’s function room yesterday.

It was nice to have everyone over 🙂 Everybody bought delicious food like Chicken rice, ngioh hiang, salted mustard duck soup, braised meat & egg… who can forget the Yu Sheng! 😀

I made pineapple tarts which didn’t turn out as well as i thought 🙁 I mean.. it was my X time baking these tarts.. The bad part about the tarts were the pineapple paste (used the prepacked ones) As I was feeling depressed, discouraged and upset… I was glad that my friends think it tasted good – even packed the leftovers ( not many) home..

haha.. ok.. blogging this for records… with reference to what BH blogged about “our year end feast where I prepared the lobster tail with ease”

I realised that PhotoScape allows me to add small images ( I M WOLS.. heh) – so I did that for the pictures below to indicate our feelings while preparing the meal… Overall, I would say.. good cooperative work! 😀

BH is a very confused cook. I mean… he changed his mind with regards to which recipe he’s following very quickly. I’m glad it worked out eventually… If you are wondering… he followed the (what I called) ‘let the lobsters swim in the water’ recipe.. heh

After 15 mins and alot of ‘eh.. amanda… how ah?’

While he was ‘swimming’ with the lobster… I cooked the pasta… following this recipe I like Noobcook – I think she provides one of the BEST online recipes and her instructions are clear and ez to follow 🙂

I burn, I pine, I perish

If I achieve not this… Petite Shopping Tote (PST) OR Petite Timeless Tote (PTT)








hahaha.. it’s a new year and I got new target already!!! 😀

On the second day of the new year, BH and I made a trip downtown.. just for fun… well, I had to walked into Chanel and I saw the PST in RED!!! OMG!! It’s so hard to find RED chanel bag ( the BRIGHT red!!) It was love at first sight. The PST is not too big and it’s just right for me – The size is perfect!! I don’t like big bags anyway. It fits the kindle, my vapur waterbottle, wallet and handphone. Nice! I think i can still fit a magazine!

The thing that I didn’t like is.. it doesn’t have the little feet at the bottom of the bag to protect the base of the leather :/ It has a snap closure. Then again, the price of this PST is probably the most reasonable ( considering the cost of the other bags) among the rest of the bags.

Seriously, I NEED TO GET THIS! PST price in the US now – $2000 ~~~

I came home and saw the PTT online ( didn’t see it in the store) – It has all I want! Feet at the bottom and zippered closure. I can probably put everything except the magazine. hahaha… PTT price in the US now – $2250 ~~~

*gasps* I WANT!!!! Now, I am just hoping that when we get to Europe – the bag is sitting on the shelves ( or at the back of the store) waiting for me… wah…. the smell of caviar… the touch of the exquisiteness of the bag.. is such a turn on!!

As for the colours… 1st choice: LIPSTICK RED OR GREY ( very rare 🙁 ), 2nd choice: Black with GHW, 3rd choice: Black with SHW

At first, I told BH that we are just going sightseeing in Europe and we can skip France or rather Paris altogether… but looks like… we can’t.. hehe… I am so excited!!!!

[Edit] Then again, if I go to Paris and didn’t get a classic flap.. isn’t it such a pity??!!! how now blue cow?

2011 Review (Binghuan’s edition)

It is that time of the year again! It is the annual blog review, in fact I do this more than exercising.
So my new year 2012 resolution is to…. DO MORE EXERCISE!

I actually had my first physical exam here in the States a few weeks ago and pass with flying colors, but this won’t last long if my wonderful chef keeps cooking delicious food for me everyday. So my first task next year is to get into shape.

So I read my past entry for 2010 and am happy to say that I have upped my cooking attempts. Just check out our year end feast where I prepared the lobster tail with ease. :p

Next year this is what I want to accomplish:
– Do more exercise
– Complete my tower of defense game for WP7
– Step up my cooking (I actually really like to cook if my expert chef would be more willing to teach :p)
– Have a taste of pet ownership

What I am looking forward to:
– Travelling to Euro for the first time
– Training my dog and exercising with my dog!
– Spending another fun filled year with my wife *hugz*

I am really scare when I look back, it seems like time keeps creeping up faster each year, maybe its an artifact of getting old? 2011 seems to just fly by, you know the feeling you get when you feel like you could have done so much more but only managed to accomplished a few…

My forecast for 2012, I don’t think its going to be an exciting year but who knows, maybe it will surprise me since life is just filled with that…

2012 .. IT’S HERE!

life is really and indeed not a bed of roses

2011 had been a year filled with ups and downs ( once again) You know.. . When all is well, something may just pop up.. I guess that’s when we learn.. and how we grow stronger.

2011 is the year I lost someone really dear to me, my grandpa. Just the thought of it makes me tear – he passed away on the very day I left SG. I know he is probably enjoying himself in a better place now – still… it upsets me that I’m not there 🙁

2011 is also a year that we finally got our HDB. If there is a reason why I am saving money/working hard.. it’s because of my home. I always thought and wanted my home to be perfect. Nice furniture and renovation. I was quite upset that all these things had to be compromised – for the greater good. I really hope that I will be able to achieve my dream home in the near future

2011 marks the year that we made the MOST friends ever since we first relocated here. haha.. we had been really contented with just the 2 of us that making more friends isn’t part of the plan. Then again, by a stroke of luck, we participated in a SG gathering ( our first in 3 yrs btw) and we met friends who intro us to even more friends. It’s nice to have friends to hang out and to share our food with 🙂

2011 also made me a good cook. I think I really enjoy cooking. I can look for recipes and get really excited to cook something new! I am embarrassed to admit it but cooking is fun! heh.. I do wish that what I like to do is something that would mk me rich in terms of wealth, rather than .. erm.. FATS?

2011 is also the year that I got my first CHANEL BAG! 🙂 I must thank you BH for his generosity! I feel very blessed to have a great hubby who is willing to spend $ on me.. haha..

2011 marks the first time I visited a doc here!! It is a bad year for me in terms of health. sigh… I went to the doc countless of times. Health is wealth! I also extracted 2 of my wisdom tooth ( the other 2 will be extracted this year)

I am looking forward to 2012!! I’m also scared… but….

I can’t wait to be FREE ( out of my bond)!! I was telling BH that on the day I get my FREEDOM, I will….. BAKE A CHEESECAKE! Yes… life is just so plain simple and sweet. Trust me.. it’s not the money! The road to freedom may not be ez… 🙁 I may or may not succeed.

I also wish for GOOD HEALTH… Health is very important!!!

I hope that we could get a dog we both like too – it will be perfect if it’s a rescue 🙂 It’s nice to have something we both love and can come home too ( nah.. not a human baby!!)

Another wish is to travel MORE! I realised that we haven’t been traveling much because we are saving $. I hope 2012 will be a better year for us financially??!! haha… I know it’s weird… we will probably be quite broke..but at least the money we earned is for our enjoyment and not to save up for other purpose!!oh… I also can’t wait for our Europe trip in April!!! OMG!!! Trip of a lifetime!! I also want to go to Disneyworld during Christmas!!!

and.. come April 2012 will also mean that BH and I had been together for *drumroll* 10 years!!! 😀 can’t believe it right!! heh.. I hope we will have many many more years together!

erm.. I think that’s all I can think of for now.. haha … HAPPY NEW YEAR to all!!! and… Do take care and be happy! There’s nothing more important than being happy 🙂

Merry X’mas!

haha.. well.. it’s not really over.. there’s 12 days!

The first thing that came into my head is… X’mas is over-rated with all the snow (fortunately the weather is super good this yr!) and presents. We tend to forget the real meaning of X’mas! Then again, the thing about me is I classify something as ‘over-rated’ just because nothing special happened. hehe…

Anyhow, we watched MI3 at IMAX on X’mas eve. We also walked by our very first home in Seattle – it’s currently occupied by someone else. The weather was beautiful…then we realised how much we miss Seattle. On X’mas, BH and I baked some cookies! It’s always nice to do something together. How can I forget? NBA season started too… grrrr…. After some nagging, we managed to squeeze in some time for a movie at home – we watched ‘ONE DAY’… such a bittersweet movie 🙁

I didn’t get him anything as X’mas present and I didn’t expect him to get me anything….However, BH still got me a small gift – Rachael Ray Lazy Spoon in Orange. He was like ” Just right for a lazy girl like you! ” Really??? Am I lazy? haha..

Christmas happens in you heart.. and I was just glad to have such a huge gift with me all the time – BH. haha… how lucky am I to hold on to my present everyday and nearly everywhere I go 🙂 I’m just hoping that it won’t be our last..

HAPPY NEW YEAR!! (Just for in case, I didn’t drop an entry here in time)

1st visit to Corgi breeder

Well, BH had been thinking of getting us a puppy for the longest time. I’m not sure what makes him want to do so… maybe because I have been yakking about Bambi each time after I talked to my mum on the phone or maybe because my sis sends us pictures of Bambi or maybe because our friends here have dogs and we want 1 too or maybe he’s just bored that it’s just 2 of us 🙁 ? I really don’t know

While I was still at the stage of ‘toying’ with the thought of having a dog.. BH was searching for puppies/breeders online. He emailed this breeder at Ellensberg, WA – http://www.heartbarx.com/ and we decided to take a 2hr drive down to see the pups on Saturday. That was the highlight of our week… we were excitedly looking forward to our trip to the breeder.

The night before, BH and I were out to do some shopping. Then BH was like “Hey.. I need to find ATM.. get money..” I didn’t find anything amiss.. but BH came back from the ATM and told me he withdrew $100 so that we could put deposit for the pup tml. I was taken aback by how serious he was and thought that he was really sweet. I mean.. he has really bad memory but the thought that he rems to take money for that purpose just shows how serious he was! That night, I was sleepless.. I was excited yet scared.

I had my reservations about having a pup:
1) I don’t know how to take care of a pup!!! I’m so new!!
2) I need to buy pup things to prepare for the home – what to buy? how to prepare? is there space?
3) Our apt is carpeted , pup will confirm dirty the place! how!!
4) I haven’t break my bond yet.. what if i need to go back? ( My sis won’t mind having a 2nd corgi.. haha)
5) We will be traveling next yr, who can help to take care? ( we have friends with dogs.. but not sure if they are willing to care for our pup)

The day came .. we woke up early (even earlier than the alarm) – went out for breakfast and drove to the breeder. It was a beautiful day.. we were admiring the scenery and ‘wowing’ at the beauty of nature… then we wondered how nice is it to have a dog to enjoy the beautiful day with.

We stopped along the freeway to take these pictures…








We finally reached the breeder and was greeted with a row of 4 adult corgis – woofing around as though to welcome us ( or threaten us not to bring the pups away) haha… we saw the pups.. they were so small.. like pieces of charcoal on the floor. We disinfected our hands then asked the breeder some qns and tried to play/socialise with the remaining pups.

For me, it was NOT love at first sight.. the pups just didn’t wanna come to me… I wonder if they could sense my fear… they all love BH ( or rather his shoes.. haha) anyhow, BH was really bought over by Boo…who rested next to him after playing. It was an epic moment! It’s a pity that I didn’t connect with any of the corgis… We left… feeling sad and disapted…
