Tried to bake in my new pan and failed terribly. It is my worst baking attempt π well… Maybe happycall isn’t suitable for electric coil stove?

It was a lazy Saturday afternoon. Bh and I decided to drop by Bellevue downtown and enjoy our first weekend back here. We feel really selfish but we enjoy having such relaxing weekends to ourselves and ourselves only
for drinks, I got myself a lychee geisha $9 while bh got a Collins cocktail $8. I love my lychee! It tasted like lychee martini w a twist!
For food, we have chicken tacos $7, which the server kindly split the food for us and the ahi tuna sliders $7! Nice π we like the sliders alot and give it 4/5
The happy hour selection is really small but the ambience is cool and open. Its a nice place to people watch! Would come back again~~

New way to carry it!!! Say… Nice!!!!
I thought this bag can only be a crossbody or handcarry but my recent trip to SG (and to orchard rd) make me realize that I can carry it as a shoulder bag! Happy! π

I can’t sleep! It’s abt 2.30am here π have been like this for the past few night.. So irritating…
I had the most eventful flight ever back to SG.
I guess it’s just me.. I like to plan my trips way in advanced..I like to know how my finance situation would be after spending XX amount of money on tickets.. and also.. I like to have something to look forward to. Hence, I booked my flight via SQ website on Jan 20, 2012. [And it just slipped my mind that I need to check for any flight changes prior the trip!!]
My flight was supposed to be on the 31 July departing from SEA to LAX, 10am. When I arrived at SEA, I was told the flight had rescheduled to be earlier, 9am! I was shocked as I did not receive any email/phone call to notify me of the change. As a result, I missed the flight. The staff at SEA managed to reroute me to LAX via PDX. However, the flight was delayed at PDX, causing me to miss my SQ11 flight on that day! I was devastated! In the end, I got rebooked for the next day’s flight and redirected back to SEA. Just when I thought the worst was over, I realised that one of my check-in baggage was missing! (Fortunately, it was located at the LAX airport much later – it was a scary experience nevertheless)
Finally, I arrived at SIN one day later (3 Aug) It was due to the fact that SQ did not inform me of the 1st flight change that I experience many hiccups in this trip! I not only lost one precious day of reunion with my family and also missed celebrating my Dad’s birthday π
Yes, I did email SQ about my situation asking for compensation…However, I didn’t receive any. *sob*
Reminder to self: Not to take SQ for future travels to SG
Reasons:
1) Domestic flights are quite unpredictable – I might reach SFO/LAX late, hence missing my flight
2) At LAX, I will need to walk about 10mins to Terminal B to catch the international flight to SG ( Lucky thing: Check-in luggages will go all the way to SG)
Then again, I cannot ignore the fact that it’s nice to hear the stewards/stewardess speaking Singaporean English after a long while π
Test!!!
OMG! I failed my own challenge!!! :/
I was back in SG for 1 mth+ and I’m now back in the states. Well.. i could blog in SG BUT I can’t rem my pw!
Now trying to settle down and unpack. Stay tuned!

We went to Whidbey Island for the first time! Well, the main point of the trip was to bring the doggies to a off leash beach! How cool! The weather was not exactly sunny… in fact, it was windy, cold and rainy :/
Before the trip, we had breakfast at Pomegranate Bistro ( Oh yes, Dave is on clutches as he sprained his ankle)
The view was pretty nice.. but not as nice at the Bainbridge Island ferry.. haha.. the whole ferry ride only took 20mins! As we were driving a Honda fit, our price for car+passenger is only $7.75 ( small car category) – I think we were overcharged several times previously
We drove about 10mins to reach the beach.. it is a really nice place!
Alina kindly loan us her dog, Benji.. haha.. and it was the first time BH picked up dog poo…. heh.. tell me about it – BH had been talking about getting a dog for the longest time!!! On days like this.. we want a dog π
Whidbey island is quite small.. after the beach.. we hang out at Prima Bistro for Happy Hour. I personally feel that their happy hour menu is quite interesting.. there’s Pig ears , Bone marrow and snails!
It was a good trip….. until we had to board the ferry back… we started lining up at 5.15pm and only boarded the 6.30 ferry! Long wait~~
BH and I found out that there’s a no. of dog breeders in Whidbey island! haha..maybe the next time we come over, it will be for our puppy! π
ok.. check out my new aviator sunglasses! cool??!!

Practise makes perfect! Finally – the almost ( I believe there’s room for improvement) perfect Japanese cheesecake!
Japanese Cotton Cheesecake Recipe
(from Everybody loves a sweet ending)
Ingredients:
140g/5 oz. fine granulated sugar
6 egg whites
6 egg yolks
1/4 tsp. cream of tartar
50g/2 oz. butter
250g/9 oz. cream cheese
100 ml/3 fluid oz. fresh milk
1 tbsp. lemon juice (can omit if you want a sweeter cake)
60g/2 oz. cake flour /superfine flour
20g/1 oz. cornflour (cornstarch)
1/4 tsp. salt
Instructions:
(Preheat oven to 160deg)
1. Melt cream cheese, butter and milk over a double boiler.
2.Cool the mixture. Mix in lemon juice, egg yolks and then fold in the salt, flour and cornflour.
3. Whisk egg whites with cream of tartar until foamy. Add in the sugar and whisk until soft peaks form.
4. Fold egg white mixture 1/3 at a time, to the cheese mixture until the batter is even.
5. Pour into a 8-inch round cake pan (Lightly grease and line the bottom and sides of the pan with greaseproof baking paper or parchment paper).
4. Bake cheesecake in a water bath* for 1 hours 10 minutes or until set and golden brown. (I left mine to cool for half an hour in the oven with the doors ajar as advised from other bloggers cos I was afraid that it would collapse suddenly if there was too big a change in temp)
*To bake cheesecake in a water bath means putting the cake pan (the one with the batter), into a bigger pan which contains hot water up to the middle of your cake pan. my 2 6-inch cake pan fits nicely in my baking pan π
My notes:
– For step 2, it is important to cool the mixture to room temperature. I waited about 1 hr for the mixture to cool. I mix the flour and wolk mixture by hand – no need to use mixer
-For step 3, mix egg whites to soft peaks = creamy, thick mixture. Peaks droop when you make a peak with a whisk. This is the only step I needed to use my mixer
– This time round, I actually separate the egg whites and yolks using a egg seperator. It is better this way as egg yolk will not accidentally break, contaminating the whites
– I used 2 6-inch pans and baked for 1h 10 mins. I feel that baking in smaller pans makes the cake raise better
– My cake pans are not springform types. If you are using a springform pan, do wrap the botton of the pan with aluminium foil so water doesnβt seep into your cake.
