2nd try: Japanese Cheesecake

Pls remember my cheesecake as on the pic above – delete all other pics you are gonna see later in this post. ok? haha..

So BH encouraged me to try the cheesecake again.. and we followed a different recipe. We used this recipe instead. This recipe is super easy to follow and it DOES NOT need flour or butter!! I was shocked but decided to try it out. If you are wondering whether corn starch = corn flour, I think it’s the same as I used corn starch. ( Can’t find corn flour here)

Everything went on smoothly this time round as we learnt from our previous experience.

I only have 1 mixing bowl for my mixer.. so we modified the recipe abit – like I sequence the beating of egg whites 1st then beat the cream cheese. ( Keeping my fingers crossed that it will not affect the end product)

Things to note, I did not add lemon juice as indicated in the recipe as we don’t like the ‘sour’ taste in our cake ( and i forgot to buy lemon!!!).

I was very anxious to know the outcome. I knew it was gonna be a sucess when I saw the end result (1st pic) yay!! Happy! 

Story: We wee rushing out so I switch off the oven and left the cake in the oven, thinking that It shld be alright in there… HOWEVER……..

 

yeah right… high five for we did a “failed” cheesecake again? 🙁 geeez… though it taste great!

Cheesecake is soooooooo sensitive.. Upon reflection and some research, I believe these are some of the reasons my cheesecake sank ( after rising):

1) Folding egg hwite technique was not good – we could have folded too much, or not gently enough. Some of the air escaped.

2) Not folding into the batter right after the egg whites reached soft peaks as I needed to mix the batter. ( some air could have escaped) I need TO GET ANOTHER BOWL FOR MY MIXER

3) The temperature in the oven is toooo high. Will reduce to 300F instead of 350F

4) Need to bake longer – top of my cake is not completely brown

5) I need to use boiling water for the water bake. I used hot water ( not boiling hot)

Will sure try this again! Wish us luck!

Failed japanese cotton cheese cake

Does how you feel affect the result of the cake? My FIRST failed attempt in Seattle 🙁

1) Preparing

2) Double boiling – cream cheese, milk and butter

3) Whisking egg whites by hand is tiring. DO NOT TRY

4) Used the mixer. Soft peaks are formed in 15 mins

5) Batter before puting in oven

6) Cake did not rise after 1 hr in the oven

Bittergourd with salted eggs

It was my 1st attempt to cook this… in fact, the FIRST time i bought bittergourd here… BH doesn’t like bittergourd.. so i DON’T cook bittergourd at all…

I LOVE bittergourd 🙂 It feels good to cook your fave food for yourself! It’s sad but  true…Only my mum will cook my fave food for me ..

Looks great – taste great! heh… Better than Facing East imo.. hehehe..

I always make sure that BH goes to work with lunch – if he doesn’t I feel guilty 🙁 Maybe it’s just me… So I made Char Siew in addition with the Bittergourd + Rice

Hope he’s enjoying his lunch? I always thought going to work with a lunch box is the most ‘xin fu’ thing.. I wonder if BH feels the same? oh well… he’s just so bz and he doesn’t mk me feel appreciated for the things I do for him..

Cereal treats ( CNY goodies)

This is kinda late but we made these ysterday. Super ez to make ( no need mixer) and tastes great!

Addictive!!! yummy! ( but HIGH in calories.. count to your age before indulging!)

Unboxing Kitchenaid mixer

After thinking long and hard on whether we shld open the mixer or sell it…. we finally decided to KEEP it! 🙂 heh.. no regrets! The size of the 6qts bowl is even bigger than my head BUT big bowl is good… it allows space to add ingredients and prevents splatters!

I love the all steel construction. Even the beaters and dough hooks are steel! ( unlike the Artisan, it’s plastic? not that sturdy esp if u r making bread dough) The colour of the mixer ( Dark Pewter) is really chic and pretty – matched our Brita flask. So we opened the mixer and we needed to test it out right? Used a cake mix ( the simplest way to bake) to bake cupcakes and a 9″ cake.

Cakes turns out nice! NO FUSS at all… no need to clean the batter which landed on the table… I have free hands to do some washing while the mixing is in process… wah! worth every single penny!

However, maybe the engine is ‘powerful’ ( 575 watts) – it’s super noisy, sounds abit like vaccum cleaner.. and maybe it’s new.. it has some weird engine smell coming out.. ohh… some parts of the flour was not mixed properly – so i needed to stop the mixer on a few occasions to scrape down.

Other than that…the mixing action is superb. It keeps the place clean and does the job done FAST 🙂

PS: Being able to bake with BH is bliss… it’s like doing your fave thing with your fave person.. happy! I wonder how long more do I have.

Be my cupcake!

This year’s Vday was a super unromantic and simple one…no flowers.. no eating out…  so we didn’t have any plans… Just tt I told BH that i wanted cupcakes and suggested that he ordered from Cupcakes Royale

So we collected the cupcakes from the store and bought an extra box for Keying and hubby – Hope they like it as much as we did? 8)

We also ordered their Lethal cupcake – Deathcakes. Chocolate in this cake is sooooo rich and yummy… thinking abt it makes me drool!! heh..

Then we went to the outlets. Heng ah.. i spotted a pair of really pretty Kate Spade earrings! haha.. else I won’t have any Vday gift can! hehehe…

Dinner was Herbal Chicken We co-cook this. Though it’s nothing fancy,we enjoyed our dinner! 🙂

Vday – it’s just like any other day…

The spices which my mum brought over the last time was super good!

first of all, cleaning the chicken was hard work.. the innates were so disgusting… and the fats were slimy and lumpy… i exclaimed ” eeeeeee…. yucks!” x 10000 as i was cleaning it ( 2 days before) then marinated it with the spices and stuffed mushrooms inside it.

The part abt cooking a whole chicken is the TIME – it took us abt 2.5 hrs on medium heat to steam the chicken. So we started steaming at abt 5pm and ate at 7.30pm! BH watched the fire and made sure that the water ( for steaming) in the pot does not run dry.. You can smell the herbs when steaming.. the aroma reminds me of my mum’s cooking!

after the hard work, the result was great! Chicken was surprising soft and tender! We both happily ate everything up! Finger licking good !

ok fine… i allowed myself to relax and forgt to count the calories for that meal 🙁

Our Reunion dinner

Guess what??? It’s CNY eve – the usual reunion dinner for families BUT BH and I are home away from home so technically there’s no reunion dinner for us?

However, we met up with Keying and her hubby who came all the way from NYC! wahaha… I seriously had a reunion dinner with my primary school classmate + Sec school schoolmate. heh… we were like trying to trace which year we were in the same class … and figured out tt it’s P 1-6 ( except P4)? heh..

I mean.. it was soooooooo cool to see her after so long!! 🙂 So we brought them to Lola for dinner. Their stay in Seattle was just too short man!!! cannot do much.. haha..

at least, we had a ‘reunion’ dinner ;p and a pre-Vday couple date! We had fun and hope to visit u guys in NYC ( when time & $ permits!)
