Btw, I didn&#8217;t have Cointreau or Grand Marnier to soak the cranberry\/dried longan &#8211; I used Bacardi instead. Works well !<\/p>\n<p><strong>Longan Cranberry Yogurt cake<\/strong><\/p>\n<p>(Recipe  from <a href=\"http:\/\/ellenaguan.blogspot.com\/2013\/02\/longan-and-cranberry-yogurt-cake.html\" target=\"_blank\">Cuisine Paradise<\/a>)<\/p>\n<p><b>Ingredients:<\/b><\/p>\n<ul>\n<li>245g Self Raising Flour<\/li>\n<li>175g Unsalted Butter, cubes<\/li>\n<li>180g Caster Sugar<\/li>\n<li>3 Eggs (60g each)<\/li>\n<li>30ml Fresh Orange Juice<\/li>\n<li>Zest of 2 Oranges<\/li>\n<li>1 Teaspoon Vanilla Extract<\/li>\n<li>4 Tablespoons Of Greek Yogurt<\/li>\n<li>50g Dried Longan, roughly chopped<\/li>\n<li>50g Dried Cranberry, roughly chopped<\/li>\n<li>2 Tablespoons of Chia Seeds<\/li>\n<li>Some Almond Slices<\/li>\n<li>Some Kumquat slices, optional<\/li>\n<li>40ml of Cointreau or Grand Marnier<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<div>Method:-<\/div>\n<p>1. In a small bowl, soaked dried longan and cranberry using either Cointreau or Grand Marnier for at least <span style=\"text-decoration: underline;\">30 minutes<\/span> or more. Stirring twice or more in between.<\/p>\n<p>2. Using an electric beater, cream butter and sugar till pale and creamy.<\/p>\n<p>3. Beat in egg one at a time till combined. Add in orange zest and vanilla extract, beat well.<\/p>\n<p>4. Next fold in sieved flour in <span style=\"text-decoration: underline;\">3 batches<\/span> alternate it with orange juice and yoghurt.<\/p>\n<div>5. Stir in Chia seeds and mix it well before adding in the longan mixture.<\/div>\n<p>6. Divide cake mixture into cupcake cases (<i>do not filled it to the rim, leaving about <span style=\"text-decoration: underline;\">1.5 cm<\/span> allowance for the cake to raise<\/i>)  or prepared loaf tin. Top with some Kumquat and almond slices.<\/p>\n<p>7.
